Now Is The Time To Make A Special Hungarian Elderflower Syrup

According to divany.hu, it is worth to act in the elder season and make syrup from elderflower, because it will shed the blossoms soon and we will regret not making it for a year. It is important to pick elder from low-traffic places to have glowers as clean as possible for the syrup. Obviously, flowers with lice on them are not good either.

Elder syrup is not only good for the syrup fans, it can be used for a lot of things during summer as it goes well with everything with strawberry or raspberry (e.g. jams) but there will be not elder when the real cheap strawberry and raspberry arrives. It is also good with sorbets, ice creams, lemonades and even with some really bitter chocolates.

Ingredients:
5l water
about 15 big plate of elderflower
2 organic lemons
400g sugar
15g citric acid

1. We carefully wash the elderflowers with tap water and we soak the flowers in a 5l jar filled with water. We wash and slice the organic lemons and soak those in the water as well. We close the jar and let the elder and the lemons soak for two days.
2. We filter the water in which the elder and the lemons were and pour it into a pot.
3. We boil the water, which now has the flavour of the elder, with the sugar and the citric acid. It is recommended to taste it now to adjust the sweetness or sourness by adding sugar or acid.
4. We fill the finished syrups into bottles, cover the bottles with dry cloths and let them cool.
5. Serve it with water or soda water. It will be even more delicious if we add some mint leaves to the syrup when drinking.
