Hungary’s cake of 2019 revealed!
The winners of Hungary’s Cake of the Year have been revealed. Norbert Tóth, a pastry chef from Dunaföldvár, won with his Boldogasszony csipkéje creation. László Gyuris, a pastry chef from Szeged, won Hungary’s Sugar-free Cake of the Year competition, with his Kicsi Gesztenye cake.
The official announcement says that the Hungarian Pastry Industrialists’ National Industry Council had to pick the winning cake out of 31 cakes this year, according to Origo.
The professional judges picked and announced the winner after two rounds.
In this year’s competition, the participants had to bake their creations in front of the judges, who then rated them based on professional aspects.
The winner was thus chosen: Norbert Tóth, from Tóth Pastry Shop in Dunaföldvár, and his cake called Boldogasszony csipkéje.
The talented pastry chef has been to the finale multiple times in the past years and was third place last year.
About the cake
“Boldogasszony csipkéje” is a traditional, folksy name for raspberry. It got its name for its lace-like leaves (csipke means lace in English). It is one of the healthiest fruit – aside from being delicious, it also contains lots of vitamins.
Every layer of the winning cake contains the delicious and very healthy fruit. One cake has over 600 grams of raspberry in it.
Crunchy layer, sponge cake soaked in raspberry juice, raspberry-white chocolate cream, lemon-basil ganache, raspberry marmalade and raspberry meringue form the cake.
The lace is recreated by ganache and raspberry marmalade. The cake is decorated with meringue sprinkled with lyophilised raspberries and white chocolate bits which were painted green.
This year’s winner is fresh and fruity and is closer to Hungary’s traditional cakes, but the process of making it mixes traditional trends with modern ones.
The second place went to Gergő Dezse and his cherry-almond cake, and Balázs Ipacs’s Kékestető cake comes in the third place.

Hungary’s Sugar-free Cake of the Year
This competition is co-hosted by the Egy Csepp Figyelem Alapítvány (One Drop of Attention Foundation in English), parallel with Hungary’s Cake of the Year competition.
This year, László Gyuris from Szeged’s A Cappella Pastry Shop won with his cake called Kicsi Gesztenye. The flavour of the cake is founded by chestnut, which is completed by slightly sour blueberries and crunchy hazelnut. The cake is covered by sugar-free chocolate and is decorated with chocolate arches, resembling a crown.
The cake offers a harmonic flavour and an elegant look. The cake only contains 14.9 grams of carbohydrates and 204 calories per slice. It is an excellent choice for people with diabetes, as well as people trying to be conscious of the ingredients in their food.
The cakes will be available for tasting at hundreds of pastry shops all over the country from August 18.
