Heavenly Hungarian classic: How to make perfect túrógombóc at home

Change language:

Hungarian cuisine is rich in comforting, home-style dishes, and one of its most beloved desserts is túrógombóc, or cottage cheese dumplings. Soft, slightly tangy, and delicately sweet, these dumplings are typically served rolled in toasted breadcrumbs and topped with sour cream and powdered sugar. They strike a perfect balance between simplicity and indulgence, making them a favourite both in family kitchens and traditional restaurants.

Traditional túrógombóc recipe

Ingredients:

  • 500 g cottage cheese (preferably dry-curd or well-drained)
  • 3-4 eggs
  • 200 ml semolina
  • A pinch of salt
  • 100 g breadcrumbs
  • 2–3 tbsp butter
  • Sour cream and sugar for serving

Instructions:

  1. In a large bowl, combine the cottage cheese, eggs, semolina and salt. Mix well until smooth.
  2. Cover the mixture and let it rest in the refrigerator for at least 2-3 hours. This allows the semolina to absorb moisture and firm up the dough.
  3. Bring a large pot of lightly salted water to a gentle boil.
  4. With wet hands, form small dumplings (about the size of a golf ball) from the mixture.
  5. Carefully place the dumplings into the simmering water. When the dumplings float to the surface, cook for another 5-6 minutes.
  6. Meanwhile, melt the butter in a pan and toast the breadcrumbs until golden brown.
  7. Remove the dumplings with a slotted spoon and roll them in the toasted breadcrumbs.
  8. Serve warm with a generous dollop of sour cream and a dusting of powdered or granulated sugar.

This classic Hungarian túrógombóc is light yet satisfying, perfect as a sweet main course or a comforting treat after a meal.
