This year, Hungaria celebrates its 70th anniversary and will mark the occasion with a special pop-up, where visitors can taste and purchase the Hungaria Chardonnay & Pinot Noir Brut: a sparkling wine crafted from the exciting union of two classic grape varieties, created especially for the brand’s milestone. The freshness of Chardonnay perfectly complements the depth of Pinot Noir, resulting in this unique celebratory cuvée. Meanwhile, François will debut with an exciting disgorgement station, where guests can try disgorging sparkling wine themselves. Participants will work with a 2019 vintage Blanc de Blancs, made from 100% Chardonnay. Disgorgement is one of the final, crucial steps in traditional sparkling wine production, during which dead yeast and other sediment are removed. To do this, the neck of the bottle is quickly chilled below freezing, turning the sediment into a “frozen plug” that is expelled from the bottle under pressure when the crown cap is removed. The process is completed by sealing the bottle with a cork and wire cage — also done by the guests themselves. The disgorgement station and interactive experience will be available at the Market until January 5.
