Taste the flavours of the world at Uncensored Restaurant

Uncensored Restaurant is where culinary artistry meets immersive storytelling. More than a dinner, it’s a carefully choreographed journey that blends creativity, flavour, and spectacle into one unforgettable evening.

Uncensored Restaurant

Located in the Corinthia Hotel on Erzsébet körút 43–49, Uncensored is redefining fine dining in Budapest. The concept comes from Chef Ambassador Marvin Gauci, a multi-award-winning restaurateur known for pushing boundaries. Together with Executive Chef Tivadar György and Sous Chef Borbély Dávid, the kitchen team has reimagined The Journey Degustation, bringing the authentic flavours of each country even closer to the guests’ table.

The journey degustation

At Uncensored, there is no traditional à la carte. Instead, diners are welcomed to a themed tasting menu, served Thursday to Saturday at 19:30. One group, one seating, one shared adventure.

The evening unfolds as a culinary journey across continents. Guests begin in Hungary with a refined take on túrós csusza, delicate pasta with sour cream, crisp guanciale, and sweet kápia paprika. Russia follows with beetroot-cured salmon layered with smoked mackerel mousse, horseradish-infused celeriac crème, and Siberian sturgeon caviar.

In the USA, a lobster roll is reimagined in golden brioche with lobster oil mayo and lemon jam, before Japan serves poached Kagoshima A5 Wagyu with sushi rice, shiitake, and teriyaki glaze.
