A family vision built on preservation

Celebrating its 10th birthday this February, the restaurant opened its doors in 2016 as a family enterprise with a clear mission: preserving and presenting Hungarian values.

Before Urban Betyár, the family already ran Rétesház next door, known for its traditional (and incredibly tasty!) strudels. The success of that venture inspired something more ambitious: a space that would combine gastronomy, history and experience under one roof. In Australia, at a bar themed around the outlaw Ned Kelly, the idea arose to create a Hungarian-style restaurant that would make the place more authentic with the romanticised outlaws of history.

Their guiding principle is what they call “value preservation”. Nothing here is merely decorative or replica. Every object, from furniture to everyday tools and clothes, is original. The family personally sourced these pieces from across Hungary and abroad, building a collection that feels authentic rather than staged.

More than a restaurant: a living museum

Descending to the lower level feels like entering a small private museum. The exhibition presents the life of the betyárs through thematic stories, displaying their clothes, tools and everyday belongings. Instead of romantic myths, visitors get a closer look at how these figures actually lived: what they wore, used and carried with them, and what they did in their everyday lives.

The concept cleverly balances rural and urban Hungary. While the betyár heritage evokes the countryside, the setting in Budapest ensures that the urban perspective is equally important. The result is a dialogue between the capital and the plains, past and present, locals and foreign guests.

Spaces for every occasion

Urban Betyár is also designed with events in mind. The venue offers three separate rooms (a conference room, a mirror hall and a VIP room), all available for private hire. In keeping with the family’s philosophy, the VIP room comes with no extra charge: every guest is treated as equally important.

Each space can be decorated and adapted for dinners, celebrations or corporate events, making the restaurant as practical as it is atmospheric.

Tradition on the plate – and in the oven!

Of course, the experience wouldn’t be the same without the food. The kitchen focuses on classic Hungarian flavours prepared with precision and quality ingredients, elevating familiar dishes without losing their soul. Rather than reinventing traditional recipes beyond recognition, the chefs refine them, allowing the originals to shine.

What makes the culinary concept even more special is that part of the process happens right before your eyes. Inside the museum space, Urban Betyár operates its own open-view show bakery, where staff bake their homemade sourdough bread (vadkovászos kenyér) throughout the day. The naturally fermented loaves are prepared using a traditional starter and served fresh with the dishes, filling the space with the unmistakable aroma of warm bread.
