Inspired by the Badacsony wine region, Tamás uses a rather odd and unusual ingredient in the following recipe. For this recipe, you will need your tastiest red wine and a special meat ingredient. The Mangalica is a special Hungarian pig breed with a thick woolly fur that resembles a sheep’s, but its flavour is bold, and it is one of the fattiest pig breeds there is, which means that it can better absorb the aroma of spices.
The following dish will take you to the deep Hungarian forests thanks to its flavour profile and ingredients. You are going to need some type of venison filet which can be any type of game, but in this recipe, the cook uses deer filet, but you can alter the recipe for whatever game meat you prefer.
