Hungarian black pudding with cherry has arrived
One can never get enough of rarities. Some years ago, there was a gastronomy festival in Szomolya – a village in the southern region of Bükk – in which mayor István Guczi flavored his black pudding with black cherry. According to 24.hu, his epicureanism gained so much success that they would run out of it even if they have been making it for days.
“Since then, we must consider it if we make black pudding with cherry or not, because people cannot be fulfilled with it, so we could not handle the baking,” the mayor told. “Anyone can easily make it, they should only get some of the black cherry from Szomolya.”
Guczi’s recipe is simple. You only have to add the fruit to the traditional black pudding ingredients – pork liver, lung, heart, fat and cheek, rind, rice, salt, onion, pepper, marjoram, paprika. It can be put into the sauce, then you can fry it.
“The ratio it important,” mentioned István Guczi. “About 60 dekagrams of pitted cherries is needed for two kilos of black pudding. It should be mixed delicately to avoid the fruit to be masticated. The result will be a special taste, which will be liked by anyone.”
Those who do not want to make the black pudding at home will be surely able taste it at the cherry festival of Szomolya.
